IN THE CAULDRON: Eating Raw for Breakfast

Though in no way dominating the food market, interest in meatless and raw food diets continues to spread. I spent the past eight years labeled a "bad vegetarian" from my constant consumption of breads and sugars in place of raw edibles. I suppose cooking was not my forte- but regardless, my diet did include a primarily raw breakfast. My go-to dish was a combination of fruit and raw honey. Ballard Bee Company makes a wonderful wildflower honey- though it does have a tendency to coagulate over time. If you suffer from allergies (as many of us in Eugene, Oregon do), it is an old myth to buy local honey as a way of combating our bodies natural reaction to pollens in the air. In addition, the raw nature of this meal will leave you feeling energized and clear headed. By ingesting this type of food, you reduce time in the kitchen and consume a larger quantity of the nutrients and enzymes typically cooked out of your meals.

Ingredients Needed:

1-2 whole, large peaches (washed)

Raw or 100% pure honey Raw, unsalted nuts (optional)

Raw, pre-soaked oats (optional, but soak for at least an hour prior)

If raw oats and nuts are not your style, a processed granola is a tasty alternative for those unconvinced by the raw food craze.
